Method
Step 1
Preheat oven broiler to high heat.
Step 2
In a large bowl, combine turkey, eggs, bread crumbs, rosemary, and salt and pepper to taste. Mix gently with your hands or a fork just until well blended. Divide mixture into 8 equal portions.
Step 3
Gently pat each portion of meat into a patty about 4 inches in diameter. Divide Boursin between 4 of the patties, placing it in the middle of each.
Step 4
Top with remaining patties and gently press meat together to fully enclose cheese in patties. Wrap 1 piece of bacon around each patty so that bacon crosses over the top and bottom.
Step 5
Gently transfer patties to a broiler pan. Broil burgers 4-6 inches away from heat until tops are browned and bacon is sizzling, 11-12 minutes.
Step 6
Carefully turn burgers over and continue broiling until other sides are browned and burgers are no longer pink in center (cut to test), about 3 more minutes.
Step 7
To serve, place burgers on toasted bagels and offer mayonnaise to add to taste.
