Ingredients
- 1
- whole pork tenderloin or 1 center-cut pork loin fillet (13/4-2 pounds total)
- 1 tbsp
- Pork Rub
- 8
- slices Compliments sliced bacon
Method
Step 1
Preheat oven to 450°F.
Step 2
Rinse meat and pat dry. (If you are using pork tenderloin, you will have 2 pieces of meat).
Step 3
Rub meat evenly all over with rub.
Step 4
Wrap bacon around pork in a spiral fashion so that it covers most of the meat. (For pork tenderloin, divide bacon between the two pieces of meat.)
Step 5
Place wrapped meat on a rack in a roasting pan
Step 6
Roast meat until internal temperature reaches 155°F and is just barely pink in center (use a meat thermometer and cut to test), 30-35 minutes.
Step 7
Transfer pork to a serving platter and let stand 5 minutes.
Step 8
Cut crosswise into slices to serve.
