Method

Step 1

Place beets in a microwave-safe baking dish, cover with salted water and a lid or plastic wrap punched with steam holes. Cook on HIGH for 20 min. or until beets are tender. Drain, cover with fresh cold water and set aside to cool.

Step 2

Whisk together the balsamic vinegar, honey, Dijon and salt. Add oil in a thin stream, whisking until incorporated.

Step 3

Peel cooled beets with a paring knife and cut into cubes. In a large bowl, dress baby spinach and arrange beets on top. Sprinkle with crumbled goat cheese and garnish with walnuts. Serve immediately.

Tips

Amusez-vous à rouler les truffes dans différentes garnitures : café expresso moulu, copeaux de noix de coco, noix hachées ou sucre à glacer. VARIANTES :Truffes au miel et au thym : Remplacer le sucre par 15 ml (1 c. à soupe) de Miel et ajouter de 3 à 5 tiges de thym frais à la crème. Chauffer, puis laisser infuser 5 minutes. Retirer les tiges de thym; incorporer les pépites de chocolat. Laisser refroidir, façonner en boules et enrober de la garniture désirée. Truffes piquantes : Mélanger 4 ml (3/4 c. à thé) de piment de Cayenne avec la crème. Chauffer, laisser infuser, incorporer le chocolat, laisser refroidir, façonner en boules et enrober de la garniture désirée. Truffes au chai (thé épicé) : Ajouter 2 sachets de chai et 3 ml (1/2 c. à thé) de gingembre en poudre à la crème. Chauffer et laisser infuser comme pour les truffes au chocolat. Retirer les sachets de chai et incorporer les pépites de chocolat; laisser refroidir et façonner en boules. Rouler dans de la Noix de coco râpée sucrée .
