How to choose the right fish
Selecting the right fish is the number one key to success. Firm-fleshed varieties like salmon, halibut, or swordfish all hold up well on the grill. Thin, delicate fillets will not. And if you’re not sure how to tell the difference, just ask us! Our seafood counter experts can guide you to the right catch, scale and fillet a whole fish for you, or provide custom marinades and glazes. Learn more here.
Preparation
Before grilling, ensure your fish is clean and dry. Pat it down with paper towels to remove excess moisture. This allows for better searing and helps prevent sticking. Looking to add flavour? Don’t forget to ask about our pre-made marinades at the counter, they let you skip a whole step at home when you’re on the clock to get dinner ready.
Grill time and temperatureÂ
Achieving the ideal temperature is crucial for an even cook. Start by preheating the grill to a medium-high heat. As fish cooks quickly, keep an eye on it; A general rule is about 4-6 minutes per side for each inch of thickness. To prevent sticking, make sure the grill is well-cleaned, and lightly oiled before you turn it on. (The better the sear, the less likely it will stick.) Unlike steak, you only want to flip the fish once to avoid splitting and breaking.
Tip: a fish grilling basket is a great way to avoid this and grill fish with confidence.
Perfecting the finishÂ
Elevate your grilled fish with a finishing touch. This can come from a quick squeeze of fresh lemon or a quick and zesty summer herb sauce that adds brightness and complexity to the plate.
