Deep Dish Stuffed Pancake
Got a box of pancake mix? You've got a lunch that kids will flip over! Mix together 2/3 cup (150 mL) Compliments Complete Pancake Mix, 1/4 cup (60 mL) water and 1/4 tsp (1 mL) each dried oregano and salt until smooth. Stir in 1/4 cup (60 mL) each chopped homestyle roast ham, diced green pepper and shredded cheddar cheese. Pour into 7- or 8-in. (18 or 20 cm) oiled non-stick frypan over medium heat. Cover and cook until middle is almost set and bottom is golden, about 5 min. Turn pancake over. Cook other side for about 3 min. Let cool, then cut into wedges. Pack alongside fresh fruit and veggies.
