Method
Step 1
Lightly toast the anise seeds in a hot pan over medium heat. Carefully add the water, apple juice, cinnamon stick and 2 tbsp (30 mL) of the honey in a saucepan until simmering. Add pears and gently simmer for 15-20 minutes or until pears become tender.
Step 2
To make coulis, place berries in another saucepan and heat until soft. Add honey and mix well. To remove the seeds and for a finer texture press the coulis through a fine mesh strainer and/or cheesecloth.
Step 3
Place pear on plate; drizzle coulis over the pear.
Step 4
Garnish with mint leaves, if desired.
