Ingredients
- 1
- loaf of a rustic Italian bread such as Como or Pugliese
- 2 tbsp
- Compliments Butter, melted
- 1
- clove garlic, minced or pressed
- 3/4 pound
- cooked chicken, thinly sliced
- 1
- firm-ripe avocado, peeled, pitted, and cut into 12 equal wedges
- 1 1/4 cups
- Compliments Medium Shredded Cheddar
Method
Step 1
Preheat oven broiler to high.
Step 2
Place bread on a cutting board. Cut about 11/2 inches off each end of the loaf; save for another use.
Step 3
Cut remaining loaf in half crosswise. Cut each half horizontally in half again to make 4 equal pieces.
Step 4
Place bread, cut sides up, on a baking sheet.
Step 5
Mix together butter and garlic; brush evenly over cut sides of bread.
Step 6
Broil bread 4 inches from heat just until it is very lightly browned, about 2 minutes.
Step 7
Remove from oven.
Step 8
Top each piece of bread with equal amounts of chicken and then avocado slices. Sprinkle each equally with cheese.
Step 9
Return to oven and broil until sandwiches are hot and cheese is browned and bubbling, 3-4 minutes. Watch carefully to avoid burning.
