Ingredients
- 11/2 tbsp
- olive oil plus extra 1/2 tablespoon

- Compliments Balance Chicken Breast Fillets
- 2 tbsp
- salted capers, rinsed and drained
- 1 tsp
- red pepper chili flakes
- 1 tbsp
- lemon rind, finely grated
- 2
- cloves garlic, sliced
- 2 tbsp
- lemon juice
- 2 tbsp
- lemon juice
- 1/2 cup
- parsley leaves, chopped
- Lemon wedges, to serve

- ounces Compliments Organic baby spinach, to serve
- Cracked Black Pepper
Method
Step 1
Heat 11/2 tablespoons of the oil in a frying pan over medium heat.
Step 2
Sprinkle the chicken with the pepper.
Step 3
Cook for 5 minutes on each side or until browned.
Step 4
Add the remaining oil, capers, chili flakes, lemon rind and garlic, and cook for 1 minute.
Step 5
Add lemon juice and parsley.
Step 6
Serve on 4 plates with spinach and lemon wedges.
