Method
Step 1
Zest the orange, lemon and lime. You should have at least 6 tbsp (90 mL) citrus zest. Set aside. Cut the orange into thin slices for garnish. Juice the lemon and lime.
Step 2
In a pitcher, mix together the orange juice, lemon and lime juices and honey, stirring to dissolve. Divide the citrus zest among 8 glasses along with a few fresh mint leaves and crush or muddle with the handle of a wooden spoon.
Step 3
Fill each glass halfway with the prepared citrus juice and top up with ice and tonic water. Garnish with a slice of orange and an additional sprig of mint to serve.
