Method
Step 1
Sift flour, sugar, salt and baking powder together in a large bowl. Add raisins, pine nuts and diced apple to flour mixture and mix, then set aside. In a separate bowl, combine apple sauce, apple cider and egg yolk and stir to combine. Add apple mixture to flour mixture and stir just until combined.
Step 2
Heat approx. ½“ oil in a large until a candy thermometer reads 350°F (180°C) when inserted into oil.
Step 3
Whisk the egg white to stiff peaks with a hand mixer, then gently fold into raisin-apple batter. Carefully drop large tablespoons of batter into the oil, then gently move fritters around with a slotted spoon. Fry until golden brown and cooked through, approx. 5-6 minutes.
Step 4
Combine sugar and spices in a bowl and mix to combine. Carefully remove fritters from the oil and drain briefly on paper towel, then transfer to spiced-sugar bowl and turn to coat. Place on wire rack or parchment-paper lined tray to cool.
