Ingredients

olive oil

lemon juice

chopped fresh oregano or 1/2 tsp (2 mL) dried oregano

bone-in chicken thighs (4 oz/125 g each)
4
bone-in chicken drumsticks (4 oz/125 g each)

Method

Step 1

In large bowl, whisk together olive oil, lemon juice, parsley, oregano, salt and pepper (reserve half of lemon-herb sauce in small bowl). Add chicken to large bowl, turning to coat.

Step 2

Barbecue chicken on grill preheated to medium-high, turning frequently, for 25 min. until thickest part of meat reaches 165°F (74°C) on an instant-read thermometer, or until juices run clear.

Step 3

Transfer chicken to cutting board or platter. Drizzle reserved lemon-herb sauce on top to serve.
