Method
Step 1
Whisk together lemon juice, Dijon, garlic, salt, cumin and coriander in a medium bowl. Add oil, whisking until fully combined. Add chicken thighs, unfolding each one to open, then toss until fully coated. Cover with plastic wrap and refrigerate at least 30 min, or up to 3 hrs.
Step 2
Preheat clean, oiled grill to medium-high.
Step 3
Combine honey with harissa in a small saucepan over medium heat. Cook, stirring constantly, 1 min or until honey is warmed through. Set aside.
Step 4
Grill thighs, with lid closed, 5 to 7 min per side or until thickest part of meat reaches an internal temperature of 74°C (165°F). Transfer to a plate and let rest, 10 min.
Step 5
Toast buns on grill, if desired. Cut each chicken thigh crosswise in half. Smear bottoms of buns with half of mayo then top each with chicken and some arugula. Drizzle over hot honey and top with more arugula. Smear top buns with remaining mayo and sandwich. Serve immediately.
