Ingredients

Compliments Naturally Simple Pacific White Shrimp, Cooked & Peeled, thawed

fresh ripe peaches
1
shallot, thinly sliced

lime juice

2 tbsp
Panache Extra Virgin Olive Oil
30 mL
2 tbsp
finely chopped fresh cilantro
30 mL
¼ tsp
each salt and pepper
1 mL
4 sheets
roasted seaweed snacks, crumbled

Method

Step 1

Rinse thawed shrimp under cold running water, then dry thoroughly with paper towels. Remove and discard tails from shrimp. Cut each shrimp in half, lengthwise.

Step 2

Cut peaches in half, then remove pits. Cut into ½ inch (1 cm) pieces. Place in a large bowl along with shrimp, shallot, lime juice, oil, cilantro, salt and pepper. Stir to combine. Cover and refrigerate for at least 30 min.

Step 3

Divide ceviche between serving dishes. Garnish with crumbled seaweed just before serving.

Tips

Serve the ceviche with tostadas or tortilla chips, if desired.
