Ingredients

- halibut steaks, thawed, skin removed
- 11/2 pounds
- Salt and freshly ground pepper
- 2 tbsp
- Sensations Extra Virgin 100% Olive Oil
- 1/2 cup
- dry white wine
- 1/4 cup
- fresh lemon juice
- 3
- cloves garlic, minced or pressed
- 2 tbsp
- Compliments Granulated Sugar
- 1 tbsp
- Compliments Butter
- optional
- Italian parsley, minced
Method
Step 1
Pat halibut dry between paper towels, then season to taste with salt and pepper.
Step 2
Heat oil in a 12-inch nonstick frying pan over high heat.
Step 3
When pan is hot, add halibut.
Step 4
Cook until undersides are lightly browned, 3-4 minutes.
Step 5
Turn steaks and cook until other sides are lightly browned and fish is barely opaque in center (cut to test), about 3 more minutes.
Step 6
Transfer halibut to a serving platter and keep warm.
Step 7
Add wine, lemon juice, garlic and sugar to pan; whisk well.
Step 8
Bring to a boil over high heat.
Step 9
Boil, whisking often, until reduced to 1/4 cup, about 2 minutes.
Step 10
Remove from heat and whisk in butter until smooth.
Step 11
Spoon sauce over halibut.
Step 12
If desired, sprinkle with parsley and serve immediately.
