Ingredients
- 1 cup
- coconut milk
- 1/2 cup
- Compliments Creamy Peanut Butter
- 11/2 tbsp
- Compliments Soya Sauce
- 1/4-1/2 tbsp
- crushed red pepper
- 11/4 pounds
- pork tenderloin
- 1/4 cup
- firmly packed Light Brown Sugar
- 1 tbsp
- minced garlic
Method
Step 1
In a small saucepan, combine coconut milk, peanut butter, 1/2 tablespoon soy sauce, and red pepper over medium-high heat.
Step 2
Whisk often until smooth and warm, 2 to 3 minutes.
Step 3
Remove from heat and keep warm.
Step 4
Preheat oven broiler to high.
Step 5
Cut pork crosswise into 3 equal portions (each should be 3-4 inches long).
Step 6
With a long, sharp knife, cut pieces lengthwise into slices about 1/4-inch thick.
Step 7
Lay slices out in a single layer in a nonstick broiler pan.
Step 8
In a small bowl, mix together remaining soy sauce, sugar, and garlic.
Step 9
Using a small spoon spread half of the sugar mixture in a thin layer over meat slices.
Step 10
Broil meat 6 inches from heat until well browned (sugar will brown quickly), 2-3 minutes.
Step 11
With tongs, turn meat over.
Step 12
Spread with remaining sugar mixture and return to broiler.
Step 13
Broil until browned and meat is no longer pink in center (cut to test), about 2 more minutes.
Step 14
Transfer meat to a serving platter and spoon peanut sauce into a bowl. Offer sauce to add to meat to taste.
