- plum (roma) tomatoes, cored and diced
- 2 large
- jalapeño peppers, thinly sliced
- approx. 3/4 cup
- 1 small red onion, diced
- 175 mL
- 3
- green onions, thinly sliced
- Compliments Guacamole (optional)
- Compliments Salsa Mexicana (optional)
- Compliments Sour Cream (optional)
Method
Step 1
Preheat oven to 190°C (375°F). In frypan, cook bacon on medium heat until golden and crisp, about 6 min. Drain on paper towel. Coarsely chop bacon; set aside.
Step 2
Line a baking sheet with parchment paper or foil. Spread out half the tortilla chips in an even layer. Top with half the pepperoni, mozzarella, tomatoes, jalapenos and onion. Repeat layering with the remaining half of the chips, pepperoni, mozzarella, tomatoes, jalapenos and onion. Sprinkle the reserved bacon overtop.
Step 3
Bake until the cheese is melted and chips are lightly golden, 8 to 10 min. Garnish with green onions to serve. Top with dollops of guacamole, salsa and sour cream, if desired.
