Method
Step 1
Preheat oven to 180°C (350˚ F). Line an 8 X 8 in. (20 X 20 cm) baking pan with parchment paper. Set aside.
Step 2
Pit the dates, if necessary. Roughly chop, place in a heatproof bowl and sprinkle with the baking soda. Pour 1 cup (250 mL) just-boiled water overtop, let stand 10 min.
Step 3
Meanwhile, in a large bowl, use a handheld electric mixer to beat the butter and brown sugar together until smooth and fluffy. Beat in the eggs until fully incorporated.
Step 4
Add the flour and baking powder all at once to the butter mixture; fold in the dry ingredients until just incorporated. Without draining the soaked dates, mash to a lumpy paste. Add all at once to the batter and fold in until just incorporated.
Step 5
Scrape the batter into the prepared baking pan, smoothing into an even layer. Bake 35 min., or until a skewer inserted into the center comes out clean. Cool slightly before cutting into 10 bars. If desired, serve with warm butterscotch sauce or vanilla ice cream.
