Ingredients

Savoy cabbage, thinly sliced

green cabbage, thinly sliced

red cabbage, thinly sliced

broccoli stalks, grated

red onion, finely chopped
¼ cup
chopped curly leaf parsley

apples, cubed
2 tbsp.
apple cider vinegar
30 mL
DRESSING
¾ cup
0% M.F. plain Greek yogurt
175 mL
¼ cup
mayonnaise-style light salad dressing
60 mL
¼ cup
white vinegar
60 mL
1 tbsp.
Dijon mustard
15 mL
2 tbsp.
maple syrup
30 mL
To taste, salt and freshly ground pepper

Method

Step 1

Mix together the cabbage, broccoli, onion, and parsley in a large bowl.

Step 2

Mix the diced apple with the cider vinegar and add to vegetable mixture.

Step 3

Whisk all the dressing ingedients together and mix with the vegetables.

Step 4

Refrigerate at least 2 hours and then serve.
