Ingredients

Method
Step 1
Coffee: Stir coffee with sugar in a shallow bowl until sugar dissolves. Refrigerate until cooled to room temperature.
Step 2
Filling: Meanwhile, beat mascarpone with sugar and vanilla extract in a large bowl, using an electric mixer on medium-high, until sugar dissolves. (Mixture won’t feel grainy when rubbed between your fingers.) Stir in ½ cup (125 mL) whipped topping until no streaks remain. Gently fold in remaining ½ cup (125 mL) whipped topping until no streaks remain.
Step 3
Assemble four ¾ cup (175 mL)-sized serving glasses or dishes. Spread 3 tbsp (45 mL) filling over bottom of each glass.
Step 4
Cut each ladyfinger into 3 or 4 pieces. Dip each piece into coffee syrup until just soaked, then arrange in one layer over filling in glass until covered. Repeat with another layer of filling and ladyfingers. Spread remaining filling over each. Cover with plastic wrap, then refrigerate until chilled, about 2 hr.
Step 5
Just before serving, sift cocoa powder overtop.
