Ingredients

Campari tomatoes, chopped

jalapeno pepper, seeded and finely chopped
2 3/4 cups
granulated sugar
675 mL
2 tbsp
apple cider vinegar
30 mL
1 tbsp
minced ginger
15 mL
1 tsp
salt
5 mL
1/2 tsp
allspice
2 mL
1/2 tsp
cracked black pepper
2 mL

Method

Step 1

Place tomatoes, onion, sugar, vinegar, ginger, salt, allspice and black pepper into a heavy-bottomed Dutch oven set over medium heat. Bring to boil, stirring constantly.

Step 2

Simmer, stirring frequently, for 1 1/2 to 2 hours or until jam-like consistency and thick.

Step 3

Cool completely. Transfer to freezer safe containers. Freeze for up to 1 month.
