wooden skewers (4 in./10 cm)

Method

Step 1

Preheat oven to 200°C (400°F). Line a baking sheet with parchment paper. Fold each slice of genoa salami into quarters and thread onto a bamboo skewer. Makes 24 skewers. Place on prepared baking sheet. Bake until salami is golden, approx. 5 min. Set aside to cool and crisp.

Step 2

Meanwhile, in a mixing bowl, stir together the yogurt, buttermilk, lemon juice, Worcestershire sauce, sugar, garlic powder, dry mustard, cayenne, salt and pepper, and ½ cup (125 mL) of the crumbled blue cheese. Taste and adjust seasonings, if desired. Cover and keep chilled until ready to serve.

Step 3

Remove and discard the outer leaves from the head of lettuce, if they have any brown spots. On a cutting board, tip the lettuce on its side so you can hold it steady by the stem. Cut off about 1 in. (2.5 cm) from the end of the leaves, so the head of lettuce has a flat top (keep these trimmings for another use). Keeping the lettuce on its side, cut through the head to slice off a 1 in. (2.5 cm) thick round of lettuce. Lay the round flat on the cutting board and cut it into 1 1/2 in. (4 cm) square-ish chunks -- being careful to keep the lettuce layers together. Thread each chunk onto a salami skewer. Continue cutting enough lettuce for 24 skewers. Finish by also threading grape tomatoes onto each skewer. Arrange skewers on a platter. Cover and refrigerate up to 2 hr.

Step 4

To serve, drizzle the wedge salad skewers with the chilled blue cheese dressing, sprinkle with the remaining ¼ cup (60 mL) crumbled blue cheese and finely sliced chives.

Tips

Use iceberg lettuce trimmings in other salads, sandwiches and wraps.
